Salt-grilled saury, a classic Japanese dish. When grilling fish, apply a little vinegar to the skin to prevent the skin from sticking to the net or aluminum foil.

How to make it

The saury removes the abdominal fin by bone. Be careful not to break your stomach.

Apply vinegar to the saury meat with a brush and sprinkle with salt all over.

Place the saury on a grilled fish grill lined with aluminum foil and cook for about 20 minutes.

Transfer to a bowl and serve with halved kabosu and grated radish.
