Salt-grilled saury

The saury removes the abdominal fin by bone. Be careful not to break your stomach.

Apply vinegar to the saury meat with a brush and sprinkle with salt all over.

Place the saury on a grilled fish grill lined with aluminum foil and cook for about 20 minutes.

Transfer to a bowl and serve with halved kabosu and grated radish.
