Flora crumbs grilled with herbs

The flatfish are made from three newly-decorated pieces. Make a diagonal cut into the skin and sprinkle salt and white pepper on both sides.

Place a frying pan filled with olive oil over high heat and cook the flesh from the skin. Fried over the flesh with herb crumbs (see separate recipe), olive oil, and melted unsalted butter.

Place the frying pan in an oven heated to 200°C and bake for about 4 minutes.
Once the browning is just right, remove from the oven and place in a bowl. Top with arugula leaves, pour in olive oil and lemon juice and finish.
