Zucchini with tomato stew
Cut the zucchini into 5cm lengths and cut into quarters. Finely chop the onion and cut the bacon into 3mm thick strips
Heat the garlic, deseeded chili pepper, and olive oil in a frying pan, and once fragrant, add the bacon and fry. Then add the onion and fry slowly over low heat for about 15 minutes
Add the zucchini from step 1 to step 2 and stir-fry, then add the tomato sauce, hot water, parsley and basil and simmer for 10 minutes
Arrange on a plate and garnish with Parmesan and parsley
