How to make it
1

Slice the whale back fat into very thin slices. The burdock is chopped in chicken stew, the carrots are shredded, the shiitake mushrooms are thinly sliced, and the udon is shredded.

2

Put the whale back fat in a pot and cook over the heat. Add the ingredients in the order of burdock, carrot, and shiitake mushrooms and stir-fry.

3

Once the whole thing is soft, add [A]. Once it boils, reduce the heat and remove any scum until the juice is clear.

4

Add dark soy sauce to taste, then remove from heat. Pour the soup into a bowl of udon and chopped mitsuke, and then pour salt and black pepper to finish off.
