Oven-baked golden-eyed snapper and spinach
Make a slit in the skin of the golden-eyed snapper fillets, open them like a folding screen, and pour Happomibijin over them to let it blend
Use the leaves of the spinach. Chop them into large chunks and fry them in a frying pan
Once it has shrunk, add the unsalted butter and salt and mix until combined
Remove from heat and once cooled, place on top of the golden-eyed snapper fillets and wrap
Place on a baking tray lined with parchment paper and bake in a toaster oven for about 8 minutes
Once the fillets are cooked through, it's ready. Remove from the toaster and place on a plate. Pour any remaining juices from the sheet over the top and it's done
