Salt-grilled saury Italian style

Apply a thin layer of vinegar into the grill to prevent the fish skin from sticking together. In Japan, it is often eaten with grated radish, soy sauce, and cabos, but since it's Italian-style, try eating it with olive oil, salt, and lemon.
How to make it

Wash the saury and wipe off the water with a paper towel. Sprinkle a pinch of salt evenly on both sides.

Soak the paper with vinegar and spread it thinly on the grilled fish. Bake on medium heat with the side facing downward for about 10 minutes.

After 10 minutes, place on a plate, serve with Italian parsley, capers and cut lemon, and pour olive oil all over to finish.
