Salt-grilled saury Italian style

Applying a thin layer of vinegar to the grill will help prevent the fish skin from sticking. In Japan, it is often eaten with grated daikon radish, soy sauce, and kabosu citrus fruit, but for an Italian-style dish, try olive oil, salt, and lemon
How to make it

Wash the saury and pat it dry with a paper towel. Sprinkle a pinch of salt evenly on both sides

Soak paper in vinegar and spread it thinly on the grill. Place the fish face down and grill over medium heat for about 10 minutes

After 10 minutes, place on a plate, garnish with Italian parsley, capers and cut lemon, and drizzle with olive oil over the entire dish
