Banana mousse
Place the banana in a bowl, mash with a fork, then mix with the lemon juice, kirsch, and 1 tablespoon of granulated sugar
Put the cream in another bowl, add 1 tablespoon of granulated sugar, and whip it until it is 80% stiff while cooling it in ice water
Add 2 to 1 and mix lightly, then add the chocolate and walnuts and mix lightly
In another bowl, add the egg whites and the remaining granulated sugar and whisk until stiff peaks form. Add to step 3 and mix with a rubber spatula, being careful not to crush the foam
Put step 4 into a glass and place in the freezer. Once solidified, pour the raspberry sauce over it, place a raspberry in the center and sprinkle with pistachios
