Avocado soba noodles

Place the dried soba noodles in a tray, pour in enough water to cover the noodles, and leave to soak for about 10 minutes. Then, place in boiling water and boil for about 3 minutes, then quickly cool in ice water and drain in a colander
Remove the skin and seed from the avocado, cut it into wedges, place it in a plastic bag and microwave at 700W for about 2 minutes. Mash it using the corner of a tray
Transfer the avocado to a bowl, add the bonito stock and Happomibijin, and mix well with a whisk
Place the soba noodles in a bowl and pour over [3]. Finish by topping with black sesame seeds, if desired
