Avocado soba noodles

Put the dried noodles soba in a bowl, pour enough water to cover the noodles, and let it soak for about 10 minutes. Put in boiling water and boil for about 3 minutes, then quickly remove the rough heat with ice water and pour it into a colander.

Cut the avocado with the skin and seeds removed into combs, place in a plastic bag and rinse in a 700w microwave for about 2 minutes. Use the corners of the bat to grind it down.

Transfer the avocado to a bowl, add bonito dashi, Hachimi Bijin, and mix well with a whipped whisk.

Serve the soba noodles in a bowl and pour [3]. Topped with black sesame seeds if desired.
