Amberjack and King Oyster Mushroom Ajillo

Sprinkle salt, pepper, and potato starch on the prepared amberjack
Heat 1 tablespoon of scallion oil in a frying pan and fry (A). Once fragrant, add chopped king oyster mushrooms and shiitake mushrooms and continue frying
Once the mushrooms have softened, add the amberjack (1)
Finally, add aromatic oil, sake, and Chinese soup, bring to a boil, and it's done
