Ajillo with amberjack and eringi

Sprinkle the pre-treated amberjack with salt, pepper and potato starch.

Heat 1 tablespoon of scallion oil in a frying pan and fry the <A>. Once the aroma is starting to lighten, add the chopped eringi and shiitake mushrooms and fry.

Once the mushrooms are soft, add the amberjack from [1].

Finally, add balm, sake and Chinese soup and simmer to finish.
