Bitter melon and prawns dressed in white miso
Boil the prawns, peel them and cut them into bite-sized pieces
Make the white miso dressing by adding the seasonings to a bowl and mixing well
Cut the bitter melon in half, remove the pith, and slice into thin slices about 1mm thick. Sprinkle salt on the melon and rub in the liquid, then rinse off the salt under running water
Place the bitter melon in a bowl and pour boiling water over it. Just like boiling it briefly. Drain in a colander and pat dry with kitchen paper
Transfer the bitter melon to a bowl and add the dressing from [2] and mix
Serve in a bowl and top with the prawns from [1]. It will look better if you reserve a little of the white miso dressing and drizzle it around the corners of the bowl
