Basic vegetable soup
This soup is made over a long period of time to bring out the flavor of the vegetables. It is seasoned only with salt. Because it is simple, it has no unpleasant flavors and is clear in color. Chop the vegetables into bite-sized pieces

Put the cut vegetables into a large pot. Add water until the vegetables are submerged and simmer for about 3 to 4 hours. (If scum appears, skim it off frequently.)
